Banana Chocolate Chip Bread

Ingredients (for 6 servings)
- 4 ripe bananas
- 75g melted butter melted
- 50g white sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- pinch of salt
- 185g all-purpose flour
- 100g dark chocolate chips
Preparation
- Preheat the oven to 180˚C (fan) and prepare a ~22cm loaf tin.
- In a bowl, mix the bananas until smooth. Keep bits if you prefer. Add in the melted butter and stir.
- Add the sugar, egg, vanilla, baking soda, salt, and flour, and stir until the batter is smooth. Do not overmix.
- Add in 85g of chocolate chips and pour the batter into a greased loaf tin. Top with additional chocolate chips.
- Bake for 50 minutes to an hour, or until a toothpick comes out clean.
