Banana Chocolate Chip Bread

Ingredients (for 6 servings)

  • 4 ripe bananas
  • 75g melted butter melted
  • 50g white sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch of salt
  • 185g all-purpose flour
  • 100g dark chocolate chips

Preparation

  1. Preheat the oven to 180˚C (fan) and prepare a ~22cm loaf tin.
  2. In a bowl, mix the bananas until smooth. Keep bits if you prefer. Add in the melted butter and stir.
  3. Add the sugar, egg, vanilla, baking soda, salt, and flour, and stir until the batter is smooth. Do not overmix.
  4. Add in 85g of chocolate chips and pour the batter into a greased loaf tin. Top with additional chocolate chips.
  5. Bake for 50 minutes to an hour, or until a toothpick comes out clean.
